Peanut Butter and Jelly Protein Muffins

Ingredients

1/2 cup oat bran
½ cup Protein Powder
¼ teaspoon salt
½ teaspoon baking powder
¼ cup egg whites
6 oz lemon juice
2 teaspoons Stevia (or to taste)
2 tablespoons applesauce (unsweetened)
¼ cup Walden’s Calorie Free Jelly (strawberry or grape)

Directions

– Preheat oven to 350
– Whisk together all the ingredients except jam
– Scoop batter into muffin tins sprayed with Pam
– Drop Jelly on top of the batter
– Bake for around 15-20 minutes until a toothpick comes out clean.

Makes 9 muffins.
